
Who loves doughnuts? Doughnuts are a firm favourite of ours and we think you’re going to love this Salted Caramel Doughnut recipe created for us by @gingervegan. They’re baked instead of fried and are made with apple and coconut sugar instead of cane sugar. So all in all a pretty healthy doughnut but with no compromise on taste. Does it get better than that?
Ingredients
MAKES ABOUT 8 DOUGHNUTS
150g plain flour
50g ‘Salted Caramel’ Protein Powder
50g coconut sugar
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
pinch of bicarbonate of soda
50ml rapeseed oil
240ml soya milk
FOR THE CARAMEL SAUCE
140g maple syrup
100g coconut oil
70g cashew butter
Method
DOUGHNUTS
Mix the dry ingredients together.
Add in the oil and milk and mix well.
Spoon into greased doughnut moulds and bake at 180C for 10 minutes.
SALTED CARAMEL SAUCE
Melt the coconut oil and then add it to the maple syrup and cashew butter. Stir vigorously until smooth.
Dip the doughnuts in and sprinkle the tops with a few salt crystals.
You will have extra sauce which you can store in the fridge for a few days. It will solidify but just set over a bowl of hot water to melt again or pop in the microwave.
