
It’s May already! Which means lots of Bank Holidays, and the weather?…who knows, but one things for sure Banana bread is a winner all year round. So @gingervegan has whipped up this divine Protein Banana Bread recipe for us. It’s really simple to make and tastes delicious. Happy baking!
Ingredients
MAKES 1 LARGE LOAF
250g plain flour
75g coconut sugar
50g ‘Very Vanilla’ Protein Powder
3 tsp baking powder
1/4 tsp bicarbonate of soda
350g bananas (about 4 small bananas)
180ml soya milk
50 ml rapeseed oil
100g raisins
Method
Preheat your oven to 160C and line a large loaf tin.
Mix the dry ingredients together in a bowl
Mash the bananas in another bowl and then mix in the soya milk and oil until well combined.
Add the banana mix to the dry mixture along with the raisins and stir until there are no lumps left.
Transfer to a loaf tin, then slice a whole banana in half lengthways and place the two halves on top of the mixture.
Bake for about 1 1/2 hours or until a skewer inserted in the middle comes out clean. Cover the top with foil after an hour if you feel it is browning too much.
Leave to cool on a wire rack.
